AP’s Lemon & Garlic Salmon Fillet

Here’s a delicious recipe for when you’ve had too much of the stuff that’s less than good for you!
Ingredients
- 2 lb salmon fillet
- 3-4 cloves garlic, finely diced
- A few Tbsps EVOO
- A few squeezes of lemon
- salt & pepper
Directions
- Heat a flat bottomed pan with a lid, medium.
- Add evoo and heat.
- Add garlic, watch carefully, stir. When golden, remove.
- Add salmon, skin side up, let gain a bit of color, 1-2 mins., then flip, cover with cooked garlic, a few squeezes of lemon, salt and pepper.
- Cover, cook low-medium, about 20 minutes. Check for doneness- it will cook a bit more after removed from heat.
- Sprinkle with some pepper and serve with lemon.
