Today, some brief notes about salad dressings.
AP’s dressing: take one grey poupon jar, 99% empty. Add four good shakes of a low sodium soy sauce, then fill to the half way point with balsamic vinegar. Shake well.
To dress your salad, add a few tablespoons of good EVOO and toss well to coat the greens. Then, and only then, add the grey poupon dresssing and again toss well.
Grandpa’s House Dressing: Begin with about 2 Tablespoons Helmann’s mayo in a small bowl. Add white vinegar to liquify to a nice consistency and salt and pepper to taste. Stir. Given a while to rest in the fridge is best. Toss well with a nice salad.

- 1/2 cup balsamic vinegar
